An anniversary does not require turning your sitting room into a restaurant. Sometimes it is enough to sit at a familiar table and find it feels different for the evening. No journey across town, no fixed restaurant sitting and no need to leave your guest to check on the kitchen.
When I prepare an anniversary dinner in Madrid, I do not begin by asking how many courses you want. I ask what you like to eat, what you would rather avoid and what kind of evening you have in mind. The menu follows from there.
Why staying at home can work so well
There is no next table waiting to be seated. You can talk for as long as you like, in a room that belongs to you. That freedom, however, depends on careful preparation: timing, equipment, storage and service all need to be settled beforehand.
I look at the practical arrangements before confirming the dinner and explain what I will need to use. Every home is different; I would never assume the kitchen has professional equipment.
A menu begins with listening
Perhaps there is a fish dish you remember from a holiday, perhaps you both love mushrooms, or perhaps you would simply prefer familiar Mediterranean cooking, made with particular care. These things tell me far more than a list of expensive ingredients.
I think about the progression of a meal: the first bite, the weight of the main course and what remains on the palate after dessert. Stocks, sauces and precise cooking are central to my work. They are there for flavour, not for display.

Some dishes are best finished at the table, just before they are eaten.
Service that leaves room for the occasion
Cooking is only part of my responsibility. I also need to judge when to serve, when a dish deserves a few words and when it is better to leave you to your conversation. Not every dinner needs the same staff or table arrangements; these are agreed as part of the proposal.
Discretion starts before I arrive, with clear timings, an understanding of your home and a plan for leaving everything in good order afterwards.
Allergies and dietary preferences
These need to be discussed before the menu is agreed. An allergy calls for a careful review of ingredients and preparation conditions; simply removing something from a finished plate is not enough. If an adaptation cannot be made safely, I will say so.
Planning your anniversary dinner
The date, your location, the number of guests and a little about what you enjoy eating are enough to begin. We can then agree on the menu, the service and exactly what the proposal includes.
